Alternatives include the croquembouche - a French cake that consists individual cream filled choux buns bound together in a brittle caramel sauce – it tastes fantastic, is easy to serve and as with all individual Wedding Cake types, is easy to know how much to get. Meringue based individual cakes (mini pavlovas for example), fudge cakes and profiteroles are examples of other individual cakes you could offer, but as we have said already, you are only limited by your imagination.
Once you have selected the type of cake or cakes for your various tiers, the next decisions that you will need surrounds the filling of the cake(s).
The Filling
Buttercream is the single most popular type of filling, either teamed with a fruit spread or flavoured with essence or fresh juices. It is made by blending together butter and icing sugar with a few drops of your chosen flavour (for plain, vanilla essence is often used).
The cake filling will to a large extent be dictated by the type of cake you have opted for - plain sponge will suit a buttercream and strawberry/raspberry jam filling whilst lemon sponge will suit a lemon buttercream filling for example. In general people do choose to keep it simple, however, it’s your Wedding and it’s your cake so feel free to go wild in the aisles! Some flavours are great mixed - a chocolate cake with orange butter cream or an orange cake decorated with dark chocolate for example, and a good cake maker will be able to advise you as to whether your dream cake will taste as good as it sounds.
