Again you need to remember your non-drinkers and provide a soft drink alternative. The best way of doing this is arrange with the venue for a small amount of money to be metaphorically 'behind the bar' and by asking the venue to pour the wine on the tables and when someone declines a glass ask them what they would like as an alternative. The waiters will then order the drink from the bar and deduct it from the pot. This arrangement should be in addition to placing bottled water on the tables as well.
If you want to provide for your alcohol drinkers as well, wine tends to be the most popular and practical option – you’ll struggle to keep track of and budget for individual trips to the bar.
In terms of wine you need to bank on providing each guest with between 2 glasses and ½ a bottle of wine. Red wine goes well with red meats and pasta dishes and fish, chicken and vegetarian options are best suited to white. Having said that, don’t let it restrict you – most couples serve both as many guests have a preference towards one or another regardless of what dish they are eating.

If you have a couple of close friends or relations that you know have a particular dislike of wine and you want to accommodate their preferences you can extend the arrangement for the non-drinkers to cover these people. Make sure you tell them in advance that you have done it and not to feel shy about asking a waiter for an alternative drink - having said that feel free to ask them to be subtle with their request as your pot of money won't go far if every man and his dog is making special requests.
